Carrot Rösti (Rösti van wortelen)

Hello Foodlovers,

Here we are with our "Monday recipe" :-)

Today I'm making a "carrot rösti" with a spicy curry, soy cream sauce, delicious, healthy and perfect as a substitute for potatoes.

WHAT DO YOU NEED (4 PERSONS) ?

Ingredients

For the Rösti

  • 5 Big carrots

  • 1 Egg

  • A small cup of self rising flower

  • A handfull spring unions

  • Curry powder

  • salt & pepper to season

  • 1/4 cube of vegetable broth

  • Grated Emmental cheese

For the spicy curry sauce

  • 250 ml soy cream (Alpro)

  • 1/2 cube of vegetable broth

  • Curry powder

  • 1 teaspoon honey

  • 5 drops of Tabasco

HOW?

For the Rösti

Peel the carrots, grate them finely and put it in a bowl.

Mix the carrots with the egg, flower, spring onion, curry powder, vegetable broth, grated cheese and season with salt and pepper.

Preheat the oven to 200 degrees.

Do some butter in a baking dish, and place 2 serving rings in and fill them with the carrot mixture.

Put in the oven at 200 degrees for about 30 minutes... You will notice the delicious smell in no time... :-) Hmmmm

For the spicy curry sauce

Put the soy cream in a small sauce pan. As the cream starts to get some heat, add the curry powder, vegetable broth and some drops of Tabasco (to your own taste)

Let the sauce boil down and thicken.

READY!!

Take the carrot rösti out of the oven, take them out of the rings carefully, put them on a plate, Garnish with the sauce ... and done!
