Savoury pancakes with spinach and feta

Hey everyone! Here we are again for our weekly appointment for a tasty, easy, "ready in no-time" dish!
Today on the menu: "Savory crepes with spinach and feta cheese and a cherry tomato dressing". Njammiiiieeee ;-)
WHAT DO YOU NEED? (4 persons)
Ingredients
For the pancakes
100g self-raising flour
250ml (low fat) milk
2 eggs
A pinch of salt
For the filling
2 small, red onions (these are less strong ;-) )
1 clove fresh garlic
300g spinach
1 red sweet pepper
100 gr Feta cheese
A handful of lightly fried pine nuts (optional)
Salt & pepper to season
For the dressing
250 gr cherry tomatoes
1 small red union or a finely chopped shallot
1/2 cube vegetable broth
2 tablespoons balsamico vineagar
1 teaspoon tomato ketchup
1 teaspoon sweetener
HOW?
For the pancakes & filling
Mix all the ingredients in a bowl until you have a nice, smooth dough. Do a little butter in a frying pan, add a ladle dough and fry for about 1 minute at both sides. Repeat this until you used all of your dough.
Do a little butter or olive oil in a large saucepan and fry the onion with the garlic and the sweet paprika. Add the spinach at the end and season with salt and pepper.
For the tomato dressing
Do some olive oil in a little saucepan, chop the union (or shallot), cut the cherry tomatoes into half and fry until they are tender. Deglaze with balsamic vinegar. Add a teaspoon of tomato ketchup, 1/2 vegetable broth cube and a teaspoon of sweetener.
Mix well and strain so you get a nice, smooth sauce :-)
Almost ready!
Place the filling on the pancake, put the hand crumbled feta cheese on top of the filling, rol it up, cut it in two and put it on a plate... Add the tomato dressing and garnish with a raw spinach leave.
