Stuffed cabbage leaves with cherry tomato salad

WHAT do you need? (for 4 persons)
Ingredients:
8 large white cabbage leaves (or savoy cabbage)
For the filling
500g minced pork and beef (50/50)
1 small onion, finely chopped
1 small red chilli, finely sliced
3 teaspoons finely chopped parsley
2 teaspoons finely chopped basil
1 large handful of fresh breadcrumbs
1 egg, beaten
Salt and pepper to season
For the tomato salad
A package of yellow & red cherry tomatoes (gives more color in the plate ;-))
1 apple
Olive oil
Vineagar
Honey
Salt and pepper to season
For the dressing
2 dl sour cream
5 gr Knorr "Salad mix" with garden herbs
HOW
Cabbage rolls

Prepare the cabbage leaves. Bring a large pot of salted water to boil and cook the whole cabbage leaves for about 1.5 minutes only, so they keep their green color.
Remove the leaves from the fire and rinse them under cold water, then lay on a clean tea towel to dry. Once they've cooled down, you can cut out the tough stems with a 'V' cut.
Place all of the filling ingredients in a bowl and mix well and divide the mixture into 8 pieces.
Now you van start filling the cabbage rolls with the mixture. Place the leave on microwave foil, fill the leave with the mixture and roll it up like a wrap. Roll the foil tight enough around the roll, and close at both sides with a twist knot.
Heat a pot of water to just below the boiling point, put the rolls into it, and let them simmer gently for about 35 minutes.
Take the packets out with a skimmer, cut the knot off at one side, take it onto the other knot and let the cabbage roll slide out of the foil.
Marinated cherry tomato salad
Peal the apple and chop it into small pieces. Cut the cherry tomatoes into half, put everything together in a bowl and drizzle with 5 tablespoons of olive oil, 5 tablespoons of vineagar and 1 tablespoon of honey, season with salt and pepper. Mix it well and put in the fridge.
Sour cream dressing
Take a pot of 2 dl sour cream and mix with the half of a package "Knorr salad mix"

drizzle with some lemon juice, mix well and your dressing is ready :-)
SERVING TIP:
Take a deep plate, place the marinated cherry tomato salad on the bottom of the plate, place the roll (cut in half) on top and finish with the sour cream dressing and a few drops of olive oil.
