Homemade cheese croquettes and salad

Hi guys,
Today it was a bit colder than we are used to the past few weeks, so I thought... it may be a little heavier today, but not to much ;-), let's call it "comfort food".... Hello homemade cheese croquettes!
WHAT DO YOU NEED? (4 persons)
For the croquettes:
4 tablespoons butter
1⁄3 cup flour
1 1⁄2 cups milk
1⁄4 teaspoon pepper
1⁄4 teaspoon nutmeg
3 egg yolks
4 cups Comté cheese, shredded (my favourite ;-) )
2 eggs
1⁄2 cup milk
1⁄2 cup flour
1 cup fine dry breadcrumb
oil
For the salad:
a bag salad mixture
2 avocados
2 hands full of cherry tomatoes
Grated parmesan cheese
For the cucumber yoghurt dressing:
1 cup low fat yogurt
1/2 cucumber, peeled and finely chopped
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
HOW?
Croquettes:
In medium saucepan, melt the butter. Then blend in the 1/3 cup flour, add the 1 1/2 cups milk all at once, cook and stir until thickened.
Add pepper and nutmeg.
Stir about 1/2 cup hot mixture into egg yolks. Then return to hot mixture.
Cook and stir 10 minutes.
Add the Comté cheese and stir until it is smooth...Then spread the cheese mixture in a lightly greased baking pan and let it cool in the fridge.
If the mixture is sufficiently cooled cut it into 12 portions.
Beat together the 2 eggs and the 1/2 cup milk into a small bowl.
Then roll the cheese croquettes carefully in the 1/2 cup flour; dip in egg mixture and then roll in the crumbs to a create a delicious, crispy coat.
Preheat the fryer up to 180 C° and fry 4 minutes until golden and drain.
Salad:
Just open the bag salad mixture and put it in a bowl, so you can mix the dressing through ;-). Cut the avocados into strips of +/- 1 cm and cut the cherry tomatoes into half. Season with salt and pepper.
Dressing:
Put all the ingredients into a blender, combine the yogurt, cucumber, lemon juice, salt and pepper. Blend until smooth and put it in the fridge until it is cooled.
Mix the salad with the dressing, garnish with the with lemon sprinkled avocado slices and cherry tomatoes, place the cheese croquettes on top and garnish with some Parmesan flakes and black pepper.
