Stuffed, sweet pepper “thai style”

Today I'm in a real spirited mood, so I chose a nice, spicy dish. As you know I love low carb dishes for diner, so I serve this dish with lots of vegetables instead of noodles, pasta or rice, but off course you can add some rice or noodles if you’d like.
WHAT DO YOU NEED? (4 persons)
For the stuffed peppers:
2 red, sweet peppers
400 grams of veal or pork / beef mixed
1 red onion
100 grams of feta cheese
1 bunch fresh chives
Salt and pepper
1 egg
bread crumbs
For the sauce:
A bag of wok vegetables mixture
A can of bamboo shoots
2.5 dl coconut milk
1 vegetable stock cube
1 chilli pepper
1 lemon
1 tablespoon of curry powder
1 tablespoon of fresh ginger
Lemongrass
A pinch of chili powder
A hint of honey
A handful of fresh coriander
HOW?
Preheat your oven to 200 degrees Celsius.
Wash the peppers, cut them in half and remove the seeds.
Mix the meat with the finely chopped red onion, the egg, some breadcrumbs, fresh, chopped chives and feta cheese. Season to taste with a little salt and pepper. Put the mixture into the pepper halves and press firmly.
Put a little butter or olive oil in an ovenproof dish, put the stuffed peppers in it and put it in the preheated oven for 40 minutes at 200 degrees Celsius.
While the stuffed peppers are in the oven you can start with the spicy sauce J
Melt some butter or oil in a wok and add the vegetables, chillies and bamboo shoots. Let it bake for a few minutes and then extinguish with the lemon juice.
Ooooh that already smells delicious!!
Then add the coconut milk and herbs and let the sauce simmer quietly until it is thickened enough. Add the fresh coriander at the very end, so it keeps its beautiful, fresh, green color.
SERVING TIP:
Take a big deep plate, place the vegetables with the spicy sauce at the bottom with the stuffed pepper on top.
Finish with a little hand crumbled feta and a leaf of fresh coriander.
