Sole with leek in white wine & green asparagus (low carb)

After a weekend with some good glasses of wine and some cosy restaurant visits I always prefer to keep it "light" on Monday, for the good feeling ;-)

Today I chose for a delicious sole with leeks in a white wine sauce and green asparagus, delicious spring diner don't you think? And you know what the best thing is? It is ready in like only 15 minutes, yaaaaaay!! Perfect to prepare on a monday evening, when you are still suffering from the "Monday blues" ;-)

WHAT DO YOU NEED?

For 2 persons

400 gr soles

a medium pack of green asparagus

1 leek

2,5 dl Alpro soya cream

a small cup of dry white wine

Put on the asparagus in a small bottom of water with salt. If they start cooking remove them from the heat and let them rest with the lid of the pan on it until they are tender.

Cut the leek into small pieces and fry them in a pan with a little butter. Extinguish them afterwards with a cup of dry, white wine. When the wine has reduced, add the soy cream along with some "Knorr Finesse" vegetable broth. Cook until the sauce has thickened enough.

Turn the soles into the flour and fry them shortly on both sides untill they are brown and crispy.

Choose a nice plate, and ready to serve!
